Mmm…Mmm…GOOD!!

 

Hi Sweeties!!  Hope you are having a great week!  Thank you for all of your sweet comments on my friendship post!  Ya’ll are something else!!

 

I just have to share this wonderful soup recipe with you!  It is an all time fave of my family (and ME!)

I mean after all, my saying is that I have never met a potato I didn’t like!!  I know…carb city…well, would it help if I told you I don’t EVER eat dessert??!!

Ok…well then just know that if you take a wooden spoon and wave it over the top of your pot of this amazing soup, the carbs just disappear!!  HA!!

OK, well then…Just skip dessert!!  It is soooo worth it!!IMG_0331 

Doesn’t it look simply delish???  I assure you it is and you won’t make it only once!  The great thing is it is pretty simple!!

This recipe is for Southern Living’s Baked Potato Soup!  If you try it you must let me know what you think!!  Make a little extra and give some to a friend!!  Spread the potato joy of it all around!!  It’s a great soup for those cooler autumn days!!  Serious comfort food!!

6 large russet potatoes, peeled and cut into 1/2 inch cubes

1 large onion, chopped (about 1 1/2 cups)

3- 14 oz cans chicken broth

1/4 c butter

2 1/2 t salt

1 1/4 t freshly ground pepper

1 c whipping cream or half and half

1 c shredded SHARP Cheddar cheese

3 T chopped fresh chives

1 (8 0z.) sour cream

4 bacon slices cooked and crumbled

Shredded Cheddar Cheese

1.  Combine first 6 ingredients in a 5 qt. slow cooker.
2.  Cover and cook on high 4 hours or on low 8 hours or until potatoes are tender.
3.  Mash mixture until potatoes are coarsely chopped and soup is slightly thickened; stir in cream, cheese and chives.   Top with sour cream and sprinkle with bacon and Cheddar cheese before serving.

***NOTE***

Chives are nice, but I prefer the stronger flavor of scallions.  Also, I do not cook this in my crock pot, but do the same method stove top.  It cooks in much less time and I don’t think the flavors are sacrificed.

A sandwich or crusty bread with garlic butter goes great with this!!

  8. I LOVE potatoes! And I especially love potato soup! I'm a carb addict and I don't apologize for it! And I'm a dessert addict too!
    So I will have both the soup and the dessert, thank you!

    I've been looking for a good soup recipe. I really don't enjoy cooking at all, but for some reason once Fall rolls around, I don't mind it, especially if I'm cooking something I love!

  9. OOOO! This weekend for sure!!! Looks so good for a rainy Saturday night!!

    Cinnamon's son ended up having surgery to have his appendix removed - he's doing well. The family still has about half the drive home!! Now I'm praying for rest so Cinnamon does not get too tired driving!!!

    Wanted to stop by and say good morning,And thank you for sharing this recipe of potato soup. We stopped by Sholotskys? the other day and my dh ordered their potato soup and did not like it, but I think he will love this one.I will have to come back and write it out as my printer is broken and I don't have the computer skills to put it on my computer files yet, but am working on it. LOL


    I just haven't mastered a good recipe yet, and since the weather is getting cooler , we eat a lot of soup.
    I also enjoyed your post on Friendship, just so heartwarming. Hope your day is filled with many blessings,

  12. Oh my....doesn't that look yummy. I copied this one right down. Soup is one of my very favorite dinners. I could eat it every day. One of my sweet friends makes FABULOUS soups and often brings some over. I LOVE her. :-)

    Thanks for the compliment on the chair. I've made quite a few slipcovers now....I love how they change things up. I'm a sewing mad woman right lately. I've got to get things done around here. :-)

  21. I am soooooooooo making this!! On Saturday!! For my hubby, who loves potato soup and I have always thought it was so difficult to make! I usually make one from Tastefully Simple, but I know it's full of a lot of preservatives that we shouldn't be eating. So I will go to the grocery store in the morning and get the ingredients and let you know how things work out. Thanks!! Thanks for the comments on my blog.   22. I know exactly what you mean about things being way to busy Becky. I've got to make some changes to make sure things don't get out of hand around here again anytime soon.

    I think I have the same or very close to the same recipe and it is our FAV also! It's the best ever!!! I'm making it this weekend since it's forecasted to rain and possibly snow!!! Can you believe that!!! If it does, it will be the earliest ever that I can remember for the valley. My new sweats will be perfect for lounging around. Make sure you do some kicking back also dear. We need a break!

    Ah now I am hearing Diana Krall...another of my favorite singers. She was in San Francisco not long ago. I wanted to go but the tickets were outrageous. I rented the Diana Krall concert from Netflix instead. Amazing!
