To Brine or Not to Brine?

Well, if you have never brined your turkey, you will probably answer “No brine”.  HOWEVER, we found out last year that we will never NOT brine our turkey again!!  Can we say YUMMO??!!

We use Food Network’s Alton Brown’s recipe for making our turkey brine.   Brining is merely soaking your turkey in a seasoned brine to increase moisture and flavor.  It does that indeed.  This year we are also making some sage butter to put between the skin and the meat for some additional flavor.

Sage Butter:

2 sticks butter
1/4 c. chopped sage
dash of salt and pepper

Mix ingredients and place pats of butter between skin and breast meat. Be gentle so the skin doesn’t get broken.

I am making my own vegetable stock for the brine, and oh how I wish you could smell the wonderful aroma!!  It is just filling every nook and cranny of my home, and just screams out “The holidays are here!! The holidays are here!!”

  3. Wish I had something large enough to try this out for our 18 lb. turkey this year and keep it refrigerated as suggested...rats. What do you use?

  5. Hmmm... well, let's see, I'm not sure because we were supposed to be in NC and can't go because Mr. Magpie is still recuperating. So just the two of us are now going to the Casa Monica (or that's the plan), and we will have Thanksgiving there. And something tells me, their turkey is brined... the food is YUM-O! The other choice is S&S Cafeteria.

  7. Sounds so delicious, Becky! My kids are cooking dinner this year. They do a great job. Lowell and Jen are quite amazing in the kitchen as are Christopher and Melissa so it promises to be fantastic. We leave tomorrow afternoon! Really looking forward to being with all of them.

  10. I have never brined a turkey before, BUT I have brined chicken and it does give it a much different, better taste!!! More juicy. So I'm sure yours is going to be delicious!!! I'm heading to my sister's house so no cooking here, however, Phil's sister and family will be coming out on Saturday, last minute plans. And my Saturday is so busy with rehearsal in the morning. So I'm sticking with the simple Baked Ziti. But it will be nice to eat in our new dining room. I will post pictures soon!!!

    Sounds like your home is rather aromatic!
    Nothing smells better than good food. So far,
    I have made cornbread for my stuffing, and the gravy. We went out shopping today since Jim was off and took back all the dishes we didn't want, and a few other things that needed to go back. Got a few more Christmas gifts as well.
    Dee went with us and then we all went out to dinner at Cracker Barrel, and then we went back to her house so we could visit with Rosie!
    She was soooo happy to see us!! lol
    As were we to see her! lol
    Tomorrow I will be making the Chicken dish
    called (Party Chicken), stuffing, and a pumpkin pecan pie and Tea. Susan is making mashed potatoes and Southern style green beans, and Dee is making Brocoli casserole and picking up my chocolate pecan pie from cracker Barrel.
    If you have never had one, they are to die for!! lol
    Well, happy cooking tomorrow, I'll be thinking about you while I am cooking and you can think about me too! lol

  13. Thanks for the tip! I will try that for sure. Maybe next year, I am not cooking this year but I will definitely do the sage butter for my roasted chickens and give it a try. I LOVE fresh sage's smell and the taste of it in poultry. Yummy.

  14. I've never tasted brine turkey. My sister-in-law is doing Thanksgiving this year, but I'm doing a turkey dinner on Sunday so I'll give it a try! And the sage butter sounds wonderful too, thanks for the recipe!

  15. Your turkey sounds fabulous. I am having my sister and brother-in-law and they are doing the turkey. We are doing all the sides and desserts. Brining the turkey sounds so good!   16. Oooo, Becky that sounds so yummy!! If I was living in my own place I would so love to try that but things are done the traditional way at Mom's.....no complaints it is always so yummo too. Maybe nest year!! Though Earl has yet to get a job there is still so much to be thankful for....no bills, roof over our heads, clothes, food and family.....the Lord is good ALL the time!!

    Somehow I have a feeling your meal is going to be just wonderful. I can smell it too!! I have super busy these last couple of days, but I think I might actually be ready to get up (early.. yikes) and stuff that turkey and get it into the oven.   20. Yes, yes, yes to brine a turkey! I did it last year when we had Thanksgiving at my house. Keeps it nice and moist. Will do it again next year!
